Chicken Corn Chowder


  • 2 tablespoons butter

  • Olive oil

  • 1 onion, diced

  • 3 cloves of garlic

  • 6 springs of fresh thyme, leaves only

  • 1/4 cup flour

  • 6 cups chicken or vegetable stock

  • 2 cups heavy whipping cream

  • 2-3 large russet potatoes

  • 6 ears fresh corn or 4 cups canned/frozen corn

  • salt and pepper to taste

  • 2 cups shredded cooked chicken

  • 4 slices of bacon, cooked and chopped

Instructions:

  1. Heat butter and 1 tablespoon of olive oil. Add onion, garlic and thyme. Cook until soft, 8-10 minutes.

  2. Dust everything with flour, stir to coat.

  3. Pour stock in pot and bring to a boil.

  4. Add cream and potatoes, bring to a hard boil for 7 minutes; until potatoes start to break down.

  5. Add corn, chicken and bacon. Simmer until corn is soft, about 10-12 minutes.
