Chicken Corn Chowder
2 tablespoons butter
Olive oil
1 onion, diced
3 cloves of garlic
6 springs of fresh thyme, leaves only
1/4 cup flour
6 cups chicken or vegetable stock
2 cups heavy whipping cream
2-3 large russet potatoes
6 ears fresh corn or 4 cups canned/frozen corn
salt and pepper to taste
2 cups shredded cooked chicken
4 slices of bacon, cooked and chopped
Instructions:
Heat butter and 1 tablespoon of olive oil. Add onion, garlic and thyme. Cook until soft, 8-10 minutes.
Dust everything with flour, stir to coat.
Pour stock in pot and bring to a boil.
Add cream and potatoes, bring to a hard boil for 7 minutes; until potatoes start to break down.
Add corn, chicken and bacon. Simmer until corn is soft, about 10-12 minutes.
